Fireball No-Bake Cookies. Who ever heard of a cookie made with Fireball? Well…it all started with Crossfit, believe it or not. Yes, the Crossfitters are pretty healthy eaters, but when they party, they are not opposed to a beer, glass of wine or a shot of Fireball!
My Crossfit Box always has a super fun Christmas party. It’s usually a potluck with bacon inspired food (all of these Paleo devotees love their bacon) and it’s BYOB. Last year, someone brought a bottle of Fireball and a few shots in, the party REALLY started!
So in planning this year’s Christmas party, the bottle of Fireball turned into a whole Fireball committee, complete with a dedicated Pinterest board full of Fireball cocktail and food recipes.
Fireball No-Bake Cookies
My contribution was these Fireball Balls, a riff on Bourbon Balls. I remember Bourbon Balls being a Southern holiday treat in the 60’s.
I last saw Bourbon Balls at my Aunt’s house in the mid-60’s. My Dad’s side of the family was there, including Grandma Lynch, who never let a drop of alcohol cross her lips. Grandma loved those Bourbon Balls, however, because she had no idea what was in them. That is until one of the grandkids (probably big mouth me) spilled the beans. She spit out the one she had in her mouth and never had another!
I’ve adapted this recipe from the Bourbon Balls on the Aggie’s Kitchen website. They are easy, no-bake, cinnamon-y tasting and YUMMY!

Fireball No-Bake Cookies
Gather your ingredients:
1 (12-oz.) pkg. Vanilla Wafers, finely crushed
1 cup chopped pecans
¾ cup powdered sugar
2 TBS. cocoa
2-½ TBS. light corn syrup
½ cup Fireball CinnamonWhiskey
½ tsp. vanilla
Powdered sugar
Finely crush your Vanilla Wafers. I used my food processor The Keebler brand was the only kind I could find that actually came in a 12 oz. size. You don’t actually taste them, so any brand would be fine.
Combine crushed Vanilla Wafers, pecans, powdered sugar and cocoa in a large bowl; stir well.
Combine corn syrup, Fireball and vanilla in a mixing bowl, stirring well. I use my set of glass mixing bowls all the time They are my favorite.
Take a shot of Fireball (Not really. Well, only if you want to.)
Pour Fireball mixture over wafer mixture; stir until blended.
Shape into 1-inch balls; roll in additional powdered sugar.
I put the freshly powdered Fireball balls on a cooling rack over wax paper, and shook off a little of the excess powdered sugar. I let them set for about 10 minutes before putting them in a covered container then into the fridge.
Fireball No-Bake Cookies
Ingredients:

½ cup Fireball Cinnamon Whiskey
½ tsp. vanilla
Powdered sugar
Directions:
- Combine crushed Vanilla Wafers, pecans, powdered sugar and cocoa in a large bowl; stir well.
- Combine corn syrup and Fireball, stirring well.
- Pour Fireball mixture over wafer mixture; stir until blended.
- Shape into 1-inch balls; roll in additional powdered sugar.
- Store in airtight container up to 2 weeks. I refrigerated mine, just because.

LOL great story about your grandma. I have never heard of Fireball Cinnamon Whiskey but as you have pointed out, it’s time to try something new! Can we just call these “Fireballs” or will someone get their copyright panties in a knot?

This sounds like an interesting mix. I love vanilla wafers, but have never had a fireball, or anything like this. May have to try these sometime when I need something for a get together, will need help eating them. LOL

Tiffany – I never have, but I don’t see why not. How about vanilla chips or cinnamon chips? This is a very versatile recipe. If it goes with cinnamon, I think it would be great!

How many does this make? And do you think I can use Agave syrup instead of corn syrup? Crossfitter and clean eater myself so no room for corn syrup. Although I guess this whole recipe goes against everything paleo – lol!
Waunda – between 2 & 3 dozen, depending on how big you make them. I have never made them without corn syrup, but I don’t know why Agave wouldn’t work. They syrup is really just more of a binder. My Crossfit crew is a pretty clean eating bunch – except when we have a Christmas party! LOL! If you make theme with Agave, let me know how they turn out and I will add that as an option in the recipe.

Nut allergy – anyone ever made these without nuts?
I think they would be just fine without the nuts. Maybe add a few more of the vanilla wafer crumbs.

How long are these good stored in the fridge? Thinking about making them today for a New Years Party on Tuesday. Will they get soggy or anything?
I don’t refrigerate. Keep in a tupperware container. Still good for 3 or 4 days.

I just made the cookies the fireball whiskey balls but mine didn’t turn out right there too soft so can you please help me with this let me know I followed the recipe exactly so what could’ve happened
Rosa – if they are too soft, try adding 1/4 cup of crushed Nilla wafers at a time until you get the consistency you want.

Instead of cocoa powder, I like to add more cinnamon. Then roll them in cinnamon sugar instead of powder sugar. They are yummy!!!
